Who here enjoys it? It's a famous Louisiana dish, but this Yankee loves it! I made it last night with andouille and smoked sausage, and even a small piece of pepperoni. Pork hocks were added as well. It came out nice, but put a little too much Louisiana Hot Sauce and it wasn't quite thick enough either.
Anyway, here's a pic (not mine). Eating leftovers in a little while!

Growing up family and friends would drop by for a plate of them. I have friends that I knew growing up and they have also said they loved those red beans and rice. I made some back in March and froze the leftovers.
I still make her recipe but skip the green bell peppers which I used to pick out as a kid.

Whenever I hear Red Beans and Rice, I think of Johnny Otis. I miss him.

(9,580 posts)I like a little more juice with the beans, so I add more water when I cook them, letting them cook apart to thicken a bit. I make mine with ham and ham hocks and onion. Also, add a heaping tablespoon of fresh made salsa. Have you tried Texas Pete's "Hotter" Hot sauce? Spicier and not as salty as Louisiana Hot sauce. Looks good, though!

(12,132 posts)with Andoullie sausage is my favorite but I can even go without any meat at all as long as I have some hot sauce. Louisiana, Crystal or Texas Pete will all do nicely. I like the liquid to be almost a gravy and enough to coat everything but you'd have to try pretty hard to make me mad at any bean and rice dish as long as it isn't kidney beans. Baaaaaad experience with them in my youth has stayed with me all my life and I just ain't gonna eat 'em.

Our local BBQ lady made a sauce that would stop traffic.
I love to use a ham bone that has been cut across to expose the marrow. Oh boy that is so good
