zucchini and potatoes. GIANT zucchini and many red potatoes.
Making some soup now, but it didn't even make a dent in what I have left over to work with.
Anyone have favorite recipes for either or both veggies?

Systematic Chaos
(8,601 posts)...some purple onion, sweet potato and/or butternut squash (also sliced thin), and some dill.
Layer these veggies into a casserole dish and bake at about 350 for 45 minutes to an hour.
This layered vegetable casserole is healthy, extremely low in calories, and delicious!

(13,661 posts)sounds like all I need to buy is a red onion (since I also have sweet potatoes).
Wish it wasn't horrendously hot here, though - hate to turn the oven on when it's baking outside. Maybe I'll make this one evening (since I'm up late anyway) for lunch/dinner the next day.

2 cups all-purpose flour
2 cups white sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1 1/2 cups vegetable oil
3 cups grated zucchini
3/4 cup chopped walnuts
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini until they are evenly distributed. Pour into the prepared pan.
Bake for 50 to 60 minutes in the preheated oven, until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting.

(50,130 posts)I saw this on a blog. They cut slices about 3/4 inch thick from a BIG zucchini, and brushed with olive oil, and used as base for pizzas. It looked pretty good.

(47,675 posts)Mix the guts (minus sections where the seeds are just ridiculously large) with fresh spinach, mushrooms, feta, broccoli, or whatever else you're in the mood for, coat the zucchini halves in butter, stuff them, and bake until it seems done. None of that really needs to cook to be safe (unless you add eggs) so it's just a matter of when it looks and sounds done.
slice zuc's and spuds thin and layer in a casarole pan
salt and pepper layers as you assemble
mix a cup of cream an egg and some parmesian and pour over the top
bake until a tooth pick shows the potatos are cooked
I also cover with a layer of bread crumbs and parmesian cheese

slice the zuc's and saute with yellow onion and garlic until cooked to taste
serve with parmesian on top

Anything you can stuff amushroom with you can stuff a zuchini with
I slice length ways and remove the seeds then stuff with seasoned bread crumbs, crab, spinach, mushrooms, whatever.

(95,337 posts)This is my first year and I've already seen a ton of budding cucs on my first plant (I bought that one from the $0.99 rack at Home Depot so it was already started). The ones I started from seed are getting big.
I'm thinking if I have an overrun of veggies I'll donate the extras to the local mission here in Wilmington. They provide meals each day for the homeless so I'm sure they can put the cucumbers (and other excessive veggies) to work in the meals.
I don't know if you have something similiar to where you live but if you did you could donate the veggies to that group.

If you grow zuchini or squash and you have never had this you are missing half the reason to grow them! I cannot express to you how fantasicly wonderfull these are! Truly, food of the gods.
Zuchini flowers stuffed with ricota, battered and fried in olive oil and sprikled with sea salt! Absolutely my favorite food in the world.

(55,014 posts)good for stuffing - use any stuffed pepper/cabbage recipe that you like - basically ground beef, onion garlic, canned diced tomatoes (rice, cheese, breadcrumbs all optional) cooked up and mixed with some of the "meat" from inside the squash (cut lenghtwise and hollowed out)
stuff and bake, (and the joke is to eat the stuffing and toss the shells, but if they aren't too tough/hard they will be edible too)

Marinate in Italian salad dressing for at lest an hour.
Longer is better.
Grill over medium heat till soft and browned.
It's the ONLY way I'll eat the stuff.

Water to cover and a bouillon cube (beef or chicken).
Throw in some chopped/smashed garlic and any herbs that strike your fancy.
The more the better.
Boil 'em down until ALL the water is gone.
