But, first it needs to be drained and frozen overnight. Then, squeeze out all of the liquid. It doesn't crumble when you squeeze it, like it does if you don't freeze it. It also sucks up whatever marinade you use, way more than non-frozen tofu. It's like a sponge. I wish I had known about this freezing method years ago. It's not just for grilling. It's great for pretty much any cooking method. I wouldn't recommend it for smoothies, though.

it at home but I couldn't get that smooth consistancy. Now I know how to do that. Thanks.

I never had much luck getting it crispy until I found this method, because I could never get it dry enough. I haven't tried frying it after freezing yet, but I'm sure this is what does the trick. Even draining it overnight in a sieve didn't work as well.
