Is there anything better than fresh mozzarella, tomatoes and basil? Thanks for the suggestion. (Running out to get frest mozza...) Drool.

My favorite is pesto with mozzarella and fresh basil, if available, tomatoes or some fresh spinach optional. The mozzarella doesn't have to be the fresh kind, and provolone is also quite acceptable.

(requires some grilling of veggies before inserting into sandwich):

olive oil
"herbes de Provence"
salt
zucchini
yellow squash
red onion
fennel bulb
pepper to taste
provolone


OR:
herbed cream cheese
kalamata olives
grated carrots
chopped watercress


OR:

goat cheese
black olives
radicchio


OR:

fontina cheese
fresh mozzarella
rosemary
toasted walnuts


OR:

if you eat fish =
sardines
parmesan
shaved fennel
shaved red onion
lemon juice

If I had one, I would get some 100% whole wheat sub buns... and the crushed red pepper spread usually in the deli section... and an avocado sliced long ways... and some morning star fake bacon, then some banana peppers and munch away

greens and Swiss or muenster cheese. Virtually any sandwich can be put on the grill. Last week I made panini Reubens. I also make Cuban sandwiches frequently. Enjoy!

Seriously, I'm noting all your recs and will blame you for my 400 pound weight gain over the next couple of weeks

Meanwhile, we bought buffalo mozzarella and goat cheese at Costco yesterday. (We are suckers for their demo stations). Oh, and multigrain tortillas (the samples were filled with mozzarella). Any suggestions for good combinations?

can post recipe if you like. (can also be made in a skillet if you don't have a panini maker)

Have also done Cuban sandwiches, also various combos w/ turkey and/or ham plus cheese and interesting pestos or spreads.

2 Tbsp. unsalted butter, at room temperature
2 Granny Smith apples, peeled, cored, and sliced ½-inch thick
