Timing of a holiday gift/tip for a Jewish guy in a service sector job?

I want to give cards and gift cards to the people who helped me out with "things" this year.

A few of them work at the health club I joined in October. One is the personal trainer who leads the weight loss group, another is the trainer who works with me on an individual basis. Also the R.D. and the massage therapist, all of whom I've gotten to know well in just a few short weeks, and have gone above and beyond for me.

The trainer who leads the weight loss group is Jewish. One of the nicest, most positive, smart and mature guys I have ever met -- and he's a 22 year old kid! I'm not the only one that thinks so highly of him, he's worked there only since he graduated in the spring, and everyone, including his bosses, just love him. Great, great kid.

Should I give him a holiday card and gift card earlier, when Hanukkah starts, December 8? Or should I just wait and give them all at the same time, perhaps just before New Years so it doesn't seem denominational?

Any thoughts? TIA.
