in re: southern cooking
as a cook for hire since 1978 i feel the need to defend the food of my region
first paula deen does not represent southern cooking in a true day to day sense
most of her offerings would be on a large seating dinner like thanksgiving
to point your finger and say "southern cooking' is a foolhardy action
we have cajuns here and low country folk each with a style of their own
we have farm foods and quick breads
seafoods and field game our culinary heritage is truly a melange of cultures from europe and asia and africa
here in florida we have kreole influence and west indian flavors but its "southern cooking"
and let me as a pro cook direct you to your local "soul food kitchen" that is southern cooking done large and for real
i was working in the north one season in my youth and stumbled into a soul food place
i was so right at home...mac and cheese with ham mustard greens and pokeweed and slow simmered short ribs with fresh hot pepper cornbread
see... after over 30 years i can still remember what i had hell i can almost taste it
yes i admit we are fond of comfort foods but good god people we live in the south give us at least this small comfort
and please before you say southern food isnt good or good for you let me get a bowl of chicken and dumplings for you
that was the first thing i learned to cook from start to finish
in my grandmothers tennessee kitchen
if you can hold these dumplings in your mouth without a religious/sexual reaction then i will agree that southern cooking is not for you
