Cookies!

One more type to bake...a pan of Pecan Squares is cooling, peanut butter dark chocolate break up is done (and being consumed), along with ginger almond and double chocolate almond biscotti. Only Lace cookies remain.....

I used to make date squares, which were marvelous.

Now I am trying to remember the last time I saw dates in the grocery store.

preheat oven to 350 - spray a 9X12 brownie pan with pam/cooking spray

cream 1 stick of butter with 1/4 cup sugar, then beat in 1 egg and 1/2 tsp vanilla - stir in 1 1/4 cup flour and 1/4 tsp salt - this makes a shortbread dough; use floured fingers to press it evenly into the pan - bake 15 min.

In a large bowl, mix 2 eggs, 1 1/2 cup brown sugar, 1/2 cup coconut, 1 cup chopped toasted pecans, 2 tbsp flour, 1/2 tsp baking powder, 1/2 tsp salt and 1 tsp vanilla.

Spread this evenly over the baked shortbread base - return to 350 oven, bake 25 min - let cool.

Dust with powered sugar and cut into squares - these only improve as they age (which is good since it makes a lot - they are rich and sweet, so small squares are fine!)

I found one under the same name, but it called for essentially a pecan pie mix, with corn syrup,
and even I, with my sweet tooth, shuddered at that much sugar content.

I just made these. They came out of the oven about half an hour ago and are still warm, but I couldn't resist sneaking a small corner square. Fantastic. Thanks so much for this recipe.

Idea - zap them and put a scoop of vanilla ice cream....going to try that tonight!

in the baking aisle. Look in the produce section, where they have the display of nuts and Frankenfruit for holiday baking. They even sell them pre-chopped, although the only ones like that I saw felt hard, so I got whole dates as usual.

I baked pumpkin spice cookies and peppermint crunch cookies last week, and then yesterday triple chocolate w/walnuts brownies. I need to get on some traditional Christmas cookies tomorrow AND your pecan squares!

nutmeg logs and shortbread cookies. These will be added to the 4 dozen chocolate chip cookies I have already baked and the butterball cookies and graham cracker cookies my mom has baked.

I will be also baking 4 rum pound cakes, 3 pumpkin chocolate quick breads and 2 banana breads for gifts.

Snickerdoodles and pecan balls and there are some red velvet crinkle cookies in the oven as I'm typing this. I also made peanut butter blossoms and a family recipe called Italian Chews at my sister's house last weekend. I'm supposed to go over and bake more cookies with her tomorrow and then tomorrow night I'm making cake balls that look like Christmas ornaments with my niece.

Gee, I'm glad we decided to cut back this year.
