Just in time for Groundhog day - recipes using Groundhogs

After that *)#%% groundhog saw his shadow I think the best thing to do with him is to make DINNER out of him. Six more weeks of winter my A$$!!!

Braised Groundhog Recipe

Ingredients
1 (5 to 6 pound) groundhog, cut into 6 serving pieces
2 tablespoons extra-virgin olive oil
1 3/4 cups reduced sodium chicken broth
2 medium onions, chopped
3 cloves garlic, finely chopped
1 teaspoon fresh thyme, chopped
3/4 stick unsalted butter, cut into tablespoon size pieces
2 1/2 cups dry white wine
1/3 cup Dijon mustard
1/4 cup whole grain mustard
