I know these days is considered a "food trend" but I gotta tell ya, I love the stuff.
My son kept insisting he didn't like it and wouldn't eat it.... until
I'd cut up the greens so small and add it to the meatloaf (actually, I add a lot of shredded veggies to my meatloaf anyway). He thought it was parsley.
It holds up really well in a soup--better than spinach (which I also love).
Good stuff. A "superfood."

(31,516 posts)and sometimes bok choy. They label them "super greens" or "power greens" and they are delicious. I've sautéed them with a variety of other veggies that I used for a frittata and they were really good.

handful of chard
1/2 frozen banana
4-5 frozen strawberries
handful of frozen pineapple
hemp protein powder
water
sometimes a tsp flax seeds or chia seeds
sometimes some goji berries
Blend it up and enjoy!
My 9-10 year old niece and nephews all like it! But you can start with just putting a little in a fruit smoothie and working up. Your son won't even notice it and might grow to like it with a lot in there soon enough.

However, in terms of flavor, kale will always be second fiddle to collard greens
