the carrots chopped and frozen. Purple, orange and yellow. They were called colored carrots, not heirloom per se. All good. Till I added them to the soup. The whole soup turned purple. The chicken turned purple. The celery turned purple. Those suckers were dyed. We ate it anyway. My brother said I must have made the soup in honor of Prince. 😄

Reading your message made me think about making a purple salad on a bed of green lettuce, surrounded by something yet a different color.
The purple salad would be a combo of purple carrots, red cabbage, and maybe purple potatoes. (My little grocery store has been stocking the purple potatoes.)
I can't figure out what other color would work both visually and nutritionally. I don't want white potatoes because I'm using purple potatoes.

But heirloom carrots? No, I recommend fresh carrots, not those things from grandma's attic.
