This being Pi day, I did my patriotic duty by ordering a Bourbon Pecan Pie from Three Babes Bakeshop, a local San Francisco women's pie baking collective.
An important part of pie is the crust. Most bakeries give you a pie with great filling, but then they present it in a "shortcut" crust, which makes the pie somehow . . . inauthentic. It's like they didn't want to put in the considerable effort needed to bake a pie with a real, genuine pie crust like real pies are supposed to have.
Not at Three Babes Bakeshop. They bake their pies with the kind of flaky brown crust that you expect when you eat a pie- just like back at home. Of course, they make their Key Lime Pie with the graham cracker crust, but that's the way it's done down in the Florida Keys. Believe me, I know- I've been there.
In the pie picture, you'll also notice a family heirloom, a genuine gleaming Cutco knife, from when my son was a professional Cutco salesman.

(34,136 posts)When I make pecan pie, I like to chop up the pecans instead of using halves. It's easier to cut and you get a more even distribution of pecans in every bite!
