WASHINGTON Grand Island, Neb., construction worker Jose Gaytan hasn't toiled in a meat-processing plant in more than a decade, but he remembers waking in the middle of the night, his hand clenched painfully in the same position he had grasped his knife all day.
Gaytan, 36, said his experience cutting beef at Nebraska plants in Norfolk and Grand Island tells him that a federal proposal to increase the speed of processing lines in chicken plants is misguided.
If speeds are too high, there will always be a chance of somebody getting hurt, he said.
Gaytan commented on behalf of Nebraska Appleseed, one of several groups that are lobbying on Capitol Hill this week against the proposed rule. They are asking lawmakers to pressure the Agriculture Department to hold off the proposal.
