What's for dinner, vegan version

Mashed potatoes, veggie burgers, mushroom gravy, leftover green beans.

(I thought I'd start this thread because sometimes, as a vegan, I have trouble deciding what to make for dinner, and would love to see others' dinner plans!)

Tonight: roasted veggies ( Brussels, new potatoes, beets, grape tomatoes,) with plant based sausage …all marinated in olive oil and balsamic) over Quinoa. Salt and pepper to taste.

Tonight I ate raw potatoes leftover from breakfast home fries. Two English muffins with butter and peanut butter. Leftover gnocchi with vodka sauce. And of course, my standard Cosmopolitan ☺️

Yesterday and today we have been mostly stuck inside due to ice and freezing rain. So just cleaning out the fridge!

Had raisin bran w/almond milk after I fed the kiddies (4 parrots, 2 cats), and I’m afraid I’ll just be zipping open a bag of TJ’s Japanese rice/veg with a spicy Szechuan sauce as a lazy dinner.

I think I blew my wad for Xmas dinner (made a vegan ham despite my throbbing hand infection, still swollen) and am a bit dismayed to find Monday is already looming. *sigh*

Laughing at your looking for inspiration. That’s what I usually do!

And yea, I'm always looking for inspiration. My default is vegan fried rice probably similar to you.

Tonight I had bean salad, kimchi, sauerkraut, pumpkin seeds, dried apricots and dried pineapple.

I'm trying to incorporate more fermented foods in my diet, but I don't like kimchi and am iffy on sauerkraut.

Start with an Ultimate Gardein chicken fillet, cook it halfway, flip it and cover with sauce (I make, but most any jar will do) and then some more sauce, some cut up Field Roast sausage, and the faux cheeze of your choosing (that melts). Finish cooking. On the oven, heat up a tortilla (because it's just easier) in a pan. Take out the fillet/sauce/sausage/cheese ensemble, cut into thin strips, place onto hot tortilla. Roll/fold into a manageable size, cut in half, eat.

Marinara? I make my own and always have a couple of jars in the fridge, so this sounds like something I could make pretty easily. Thanks!

One of my silly, somewhat private joys is making a really good marinara from (almost) scratch. If my fingers aren't soaked in sauce and cheeze by the end of it, I've done it wrong.

I use the San Marino tomatoes, but I can always use a tip if you have a secret ingred or anything!!
