What's for Dinner, Wed., Feb. 3, 2021

Meatloaf with chopped carrots, onions, and celery in it.

Mashed potatoes made from scratch. The RG does the best job on potatoes: they have cream and butter in them.

Salad: tossed green with pistachios, feta cheese, and apple slices.

Some of the ham and pea salad from yesterday.

Dessert: warm brownies with walnuts and vanilla ice cream over the top.

We're still on Ocracoke Island in the Outer Banks so we hit a local fishery today.

Appetizer
Raw oysters on the half-shell with lemon, cocktail sauce and minced onion

Entree
Panko-encrusted filets of flounder pan fried till golden brown served with lemon and tartar sauce

Salad
Romaine lettuce with thinly sliced red onion, chopped yellow & orange bell peppers, slices of pimento-stuffed olives topped with the Landlady(!)'s special honey/mustard dressing

Dessert
Lemon & Lime sorbet

It was pretty good. The recipe that I had was with pork and cream. I made egg noodles and fried them a bit in butter hoping to replicate spaetzel a little. It was good, but not as good as I'd hoped. I'll try it again sometime.

TJ wanted to make beef tacos tonight, but has gone to bed with a slight fever. It is likely a reaction to her vaccine shot yesterday. I'm waiting a bit to see if she rises.

FLFC refused all the dog food and treats I offered him and kept yelling at me. Then I cooked him a mini-cheese burger with some of the beef for tacos. He ate some of it and walked off.

I think I'll make myself a corned beef sandwich with Swiss cheese on rye and put plenty of veggies on it.

I crisped the skin, shared them with my 2 cats.
Sides were rice and broccoli

My cat, Razz, loved the water from canned tuna. I was enticed with a coupon into buying new fangled tuna in a pouch that had no water. Razz smelled that tuna and didn't believe there was no juice. After ten minutes of argument, I put the tuna back in the pouch and added water, stirred it up and gave her that water. She commented on the poor quality of the water for another ten minutes. We don't own pets, they own us.

Panzanella salad I made the other day. I just add fresh veg when I have some. (Makes a great cold lunch). Periogies and toasted baguette.
