Appetizer: crostini with various spreads, such as fire-roasted green pepper spread and harissa sauce (roasted red peppers, Baklouti peppers, garlic paste, caraway seeds, coriander seeds, cumin and olive oil).
Baked until bubbly: a casserole dish of pork cutlets and vegetables covered with sliced potatoes, cheese and sour cream. Very tender pork.
Toscano kale, roasted garlic, and sauteed radishes.
Tossed green salad with honey mustard dressing. Carrots, red onion, fennel, and toasted walnuts. I used watercress and green ruffly lettuce.
Dessert: tapioca pudding and Maria cookies with apricot preserves on them. Orange tea.

(6,078 posts)We had our second Modernas yesterday and I figured soup would be perfect if we weren't feeling too good. We are both a little tired-feeling, so it was a good plan.
I'm making the husband lentil soup and I defrosted some Russian cabbage soup for myself.
Big turkey wings roasted rock 'n' roll style, (basically coq au vin).
Steamed spinach with slices of toasted almonds. Basmati rice.
Lemon sorbet.

(38,553 posts)I made a big batch of meat sauce and some pasta. The meat sauce was made w/ ground sausage.
I also made a meatloaf and a bowl of mashed potatoes, and a quiche.
All stuff that can be warmed up with the microwave or the toaster oven.
Tonight we're having pasta and sauce.
Dessert? Ran out of energy. I think there's some ice cream in the freezer.

All those meals sound like they will work real well during your temporary oven-free days.

First of all, the stove died AFTER our house guests moved out. They were here for 1 1/2 years. I don't want to think about what it would be like to be stove-less with 4 more people in the house.
Second, it died before we went shopping. We were able to adjust our meal plans and shopping list accordingly.
Thirdly, Sis lives literally 2 streets over. As I was cooking for us, I also cooked for them, so they (my dad lives in the top half of the house) too have a few meals they can just reheat this week.
Lastly, between my family, friends, and DUers, we were gifted enough to get a new stove.
Things could have been SO much worse.

Came out great.

(10,136 posts)a mix of spaghetti and linguine with tomato sauce, eked out with some mirepoix (I made too much last time), with an antipasto made with lettuce, olives, cheese, pickled beets, and home-made giadiniera, and cheese.
Your appetizer sounds good!
