Caesar's Legendary Salad and Restaurant

Caesar's Hotel and Restaurant are located on Avenida de Revolución in Tijuana, Mexico. It is a high-end 5-star restaurant where Caesar's salad was invented. Have Beef Wellington and a tableside prepared original salad.
Truly a culinary memorable experience.

So cool watching the server prepare this salad using the original technique. Shown on their menu, it's $135 prepared at your table.

1. Very interesting video, but if I'm going to pay $135.00 for what is essentially a side salad.

the restaurant better have three Michelin stars.

I guess they changed the dressing recipe. Julia Child often said she had the salad, at Caesar’s, prepared by Mr. Cardini himself, and it contained Worcester Sauce, but no anchovies.

3. I have to think that is in Mexican pesos, not US dollars

I've made a lot of Caesar dressing as a young man working in restaurants and high end catering. Always lemon rather than lime. Super interesting to see that recipe.

4. That makes sense. That makes the salad about $6.50

US dollars. Very inexpensive for table side preparation.

One photo of the menu I found on Trip Advisor shows $120 and it looks just like our dollar sign.

Do they traditionally use the dollar sign for pesos in most retail establishments?

Photos:

So, $120/18.1 = $6.63 USD.

According to https://en.wikipedia.org/wiki/Currency_symbol#List_of_currency_symbols_currently_in_use that symbol does not necessarily mean US dollar and is used by several nations.

I can attest to the amazing salads and the most delicious bread. Oh, and drinking just one of their 'Presidential' Margarita almost left me legless.

Also, the service was flawless. I honestly can't say enough nice things about that restaurant.

A fermented fish sauce called garum was a staple of Greco-Roman cuisine and of the Mediterranean economy of the Roman Empire, as the first-century encyclopaedist Pliny the Elder writes in his Historia Naturalis and the fourth–fifth-century Roman culinary text Apicius includes garum in its recipes. The use of similar fermented anchovy sauces in Europe can be traced back to the 17th century.

The original ingredients in a bottle of Worcestershire sauce sold were:

Barley malt vinegar
Spirit vinegar
Molasses
Sugar
Salt
Anchovies
Tamarind extract
Onions (originally shallots)
Garlic
Spice
Flavourings
