(2,674 posts)I love to make yeast breads and have baked "cinnamon snails" for years. This recipe gives me some new techniques to try next time I make a batch.
I have never heard of making the "sponge" in the way that is described. I am going to try that. Also notice how well the brown sugar and cinnamon filling stood up and didn't melt, some flour was added to the filling, I am going to try that.

(15,089 posts)Ive tried tangzhongcooking some of the flour with liquidto make bread and found I like traditional bread better because tangzhong bread is too soft for my tastes. However, the method seems ideal for cinnamon rolls.

(2,674 posts)I put the warm water and yeast in a warmed bowl, stirring till dissolved and letting it rest until full of little bubbles.(about 10 minutes), then go on with the recipe. Gives a boost to the dough, works especially well if you have a drafty kitchen like mine.
Much better than using rapid rise yeast, never liked the texture of the breads using rapid rise.

(14,176 posts)but sourdough and I added some cardamom (maybe too much) to the cinnamon-brown sugar mix. I never even tried cinnamon rolls before and they were surprisingly easy. The dough was a pleasure to work with.
This is the recipe I used: https://bakerbettie.com/sourdough-cinnamon-rolls/
