but I do use special King Arthur flour

I get down to the King Arthur Bakery every so often and indulge myself with one of their sandwiches... and their cinnamon rolls are good

I love to make yeast breads and have baked "cinnamon snails" for years. This recipe gives me some new techniques to try next time I make a batch.

I have never heard of making the "sponge" in the way that is described. I am going to try that. Also notice how well the brown sugar and cinnamon filling stood up and didn't melt, some flour was added to the filling, I am going to try that.

I’ve tried tangzhong—cooking some of the flour with liquid—to make bread and found I like traditional bread better because tangzhong bread is too soft for my tastes. However, the method seems ideal for cinnamon rolls.

I put the warm water and yeast in a warmed bowl, stirring till dissolved and letting it rest until full of little bubbles.(about 10 minutes), then go on with the recipe. Gives a boost to the dough, works especially well if you have a drafty kitchen like mine.

Much better than using rapid rise yeast, never liked the texture of the breads using rapid rise.

but sourdough and I added some cardamom (maybe too much) to the cinnamon-brown sugar mix. I never even tried cinnamon rolls before and they were surprisingly easy. The dough was a pleasure to work with.
