No roasted chicken comfort food in our house tonight!

Our neighbor, (a single lady in her mid-40s who recently lost her boyfriend to a heart attack), just invited us over to her house for homemade pizza. I know I have a couple bottles of chianti downstairs.

It's reasonably priced and full-flavored. Wines, of course, are very personal when it comes to their flavors.

Thankfully, we hadn't put the chicken in the oven before our friend called! Bonus: I won't have to clean the kitchen!

HOPE my taste for wines returns. Did have glass of prosecco on Feb. 4, and was pretty good.

2. Easy dinner tonight.

Beer battered fish and crinkle fries from frozen. I put on a pot of tomato sauce, started with sliced stick pepperoni for flavor. Tomorrow making ricotta cheese in the morning to put together a lasagna for dinner tomorrow night.

Half of the cheesecake is now gone. I sliced a hunk of it off for neighbors across the road from us and he just dropped it off for them.

3. Today is my youngest son's birthday

He is 29. 🙂

He requested teriyaki meatballs, Jasmine rice, and snow peas

And a Reese’s ice cream cake for dessert

4. She's spending the night, so it's the granddaughter special!

Pink fish (she’s 5-it’s what she calls salmon) asparagus and egg noodles. Dessert is always vanilla ice cream topped with honey. This is her favorite, followed closely by roast chicken, broccoli, and egg noodles. Dessert never changes!

6. Last of the so-so meatloaf I had in the freezer with roasted potato, onion & carrots.

9. Got a nice fish at the farmers' market yesterday

so we're having that, with asparagus and a mango/avocado/orange salad.

10. Paprika chicken thighs

with potatoes and carrots in sauce. First time making this recipe, I was skeptical, but it actually was pretty good.

11. Tomato sauce marinated chicken breast (from Aldi)

Canned whole cranberry sauce(ocean @pray)
Del monte canned corn (favored with butter, pepper, salt, morton seasoning and Lowrys garlic salt.
Coke.
No desssert as the cranberry sauce satisfied the sweet tooth.

12. Shrimp with asparagus and potatoes

The recipe called for peas but I had some asparagus I wanted to use sooner rather than later, and it worked well. The broth was great for sopping up some crusty bread.

13. Fried catfish

with seasoned cornmeal coating.

Fresh green beans with onion, bacon & halved cherry tomatoes

14. Salisbury Steak with beef gravy and thinly sliced onions.

With mashed potatoes and biscuits.
