really lets them shine and that's kind of the point with something so seasonal, unless you've got a backyard full of them and are looking for a little novelty.

Basically, it's stemmed and sliced morels, butter, salt and pepper, something mildly oniony like leek or chives or shallot, saute together and serve on toast.

Someytimes, it's the simplest stuff that is the best.

Morels are so rare and expensive that simpler cooking is best - unless you really have a huge surplus, in which case you can dry them and send them to me!

My wife slices them in half and soaks them in salt water to get rid of bugs. She flours them up like frying a chicken and fry hem in a skillet.
