What's for Dinner, Wed., May 11, 2022

Fried rice with ginger-orange tofu fried to a crisp in sesame oil. The tofu will have orange-ginger glaze.

I am out of kombucha, so drinking hibiscus tea. It's a passable substitute but I wish I had my car back so I could go to the store and load up about a dozen 48-oz bottles.

Yesterday's dinner: cabbage and veggies, beets, carrots, potatoes, almost like a hash, hamburger on a roll.

7. Just got back from cooking for Dad

(I totally get the car thing. The exhaust fell off of mine last week, so I have to walk when I go to Dad's. That may be a blessing--forced exercise.)

Dad had breaded and baked chicken drumsticks, rosemary/garlic roasted potatoes, steamed broccoli and yellow squash.


Al and I will be having stuffed zucchini. The stuffing will be ground beef, onion, carrot, peppers, mushroom, garlic and a smidge of rice. Melted cheese on top.

Brussels sprouts on the side.


Sugar-free jello is available for dessert.
