What's for Dinner, Sun., Aug. 21, 2022

Curry couscous. It has raisins, cilantro, and almonds in it.

Coconut shrimp. I didn't get them all made last night, so I have about 10 I can make, 31/60s, I believe.

Pineapple mango kombucha.

Dessert: toasted blueberry waffle with raspberry yogurt over it, topped with toasted almonds and a vanilla mochi.

The Landlady(!) made a day trip to NYC's Brighton Beach and picked up a bag full of goodies from one of the amazing Russian supermarkets in this neighborhood facing the Atlantic Ocean.

The centerpiece is a beautiful jar of salmon roe. We're hard boiling a couple of eggs, chopping red onion, opening a jar of capers, slicing some lemon and toasting some French bread. She likes to put a thin layer of mayonnaise on the bread but that's not to my taste. Everything goes on the toast then into your mouth. Yum!

The entree will be a small filet of salmon broiled with white wine and lemon and served with white rice. Steamed broccoli on the side.

Baklava and ice cold vodka for dessert.

at the university where I used to teach, there was a considerable Russian/Polish population and every year they charter a bus to Brighton Beach where they visit a restaurant and then buy all kinds of Russian/Polishgoodies. I've been invited but never took the chance to go. I hope to soon. My friend heads up this trip, so I I can still wrangle an invite.

How you're doing the salmon roe sounds so good!

4. Lemongrass chicken meatballs

on salad greens with asparagus, cucumbers, carrots, rice noodles, toasted cashews. The dipping sauce for the meatballs that doubles as a dressing is soy sauce, tamarind, cilantro, Serrano peppers, toasted glutinous rice ground into a powder, sesame oil and rice wine vinegar. We’re still enjoying the “orange wine” not made from oranges…I bought a few bottles directly from the winery…Field Recordings in Paso Robles, CA. It’s my favorite summer wine this year. Watermelon on the side.

Sloppy joes (homemade sauce), shoestring potatoes, sliced garden tomatoes and fresh sweet corn, steamed and cut from the cob.

Sad since I used to be like a white tornado in the kitchen, but that's okay as long as it still tastes good, I guess.

so I'm making pork teriyaki vegetables.

Thin slicking an 8 oz pork chop (you read that right!) to stir-fry with a package of pre-chopped veggies that have a packet of teriyaki sauce included. Those packages are actually very good; I get them from Kroger.

I think for the rest of the day we'll just be picking at stuff in the fridge.

Korean-influenced rib-eye steak, with grilled Italian sweet peppers and fennel. Dessert will be leftover melon (piel de sapo, a new variety for me) from breakfast.
