What's for Dinner, Fri., Oct. 21, 2022

Chicken fingers with various sauces--BBQ, honey-mustard, chipotle.

Couscous with cherry tomatoes and toasted pine nuts.

Just picked some arugula for a salad. Lemon olive oil vinaigrette.

Lemon berry kombucha.

2. Nothing for me.

We just got home a little while ago from our first social outing since the beginning of the pandemic. We picked up lunch and ate outside in a park by the river with another couple. It was nice and breezy. I had a Popeye's chicken sandwich and cole slaw, that's all the food I need or want for the day.

Husband had their popcorn shrimp and chicken tenders with cole slaw. Later, he'll probably still eat leftover pork and sauerkraut with the rest of the sides from last night since he seems to always get hungry about every 4 hours.

but has a normal build. In fact he's lost weight and dropped two pants sizes since he stopped working. I hate that men seem to have a freight train like metabolism.

5. Fresh shelled pea soup.

Sauteed white onion and celery with garlic.
Chicken stock with fresh thyme and bay leaves, two lbs of fresh shelled peas, two ham hocks and thinly sliced carrots, salt and pepper.
Immersion blender and just a bit of cream.
A green sweetness unlike the split pea version.

Panko and egg crusted chicken breast slices pan fried topped with lemon slices and parsley. Green beans, garlic, red and yellow peppers with crushed tomatoes to top cheese raviolis. Almond croissant with butter and cinnamon for dessert.

Used up the last of the pepperoni, some olives (stopped in Corning, CA yesterday and stocked up!) and red peppers. Will also be dinner tomorrow.
