For tonight, I have requested a pre-roasted chicken and will cook up something fresh for the sides.

(29,098 posts)I am coming to terms again with the fact that I just can't handle wheat and I've heard this is a good gluten free alternative....
We'll see.
I'll cook it with a sauce of fresh tomato, green garlic, spinach and maybe a small onion

And a salad of kirby cukes and bibb lettuce with a good vinaigrette and lots of cracked black pepper.
This afternoon is dedicated to making some healthy snack stuff for the week ahead.
Pico de gallo, hummus, pickled carrots, roasted red peppers.
