Casserole with Mexican flavors my guys really liked.

I totally made this up for dinner tonight using what I had on hand so as to avoid a trip to the store. My guys all liked it. Keep in mind I cook dinner for 3 men and they don’t like fussy meals.

In a medium saucepan I made a bechamel sauce using 5 TB butter, 5 TB flour, and about 2- 2 and 1/2 cups of milk. Once it thickened, I added a couple generous handfuls of grated sharp cheddar cheese, stirred, let it melt, then added 2 cans, drained, chopped green chiles (4 oz. cans) a dash of salt, and 1 TB chili powder.

In a greased casserole dish, I spread a couple spoonfuls of sauce on the bottom, then I made a layer of shredded cooked chicken, a layer of cooked rice, a layer of broken taco chips, then more sauce to cover. I repeated the layers and added a few broken chips to the top. Baked at 350 for 30 minutes. I served it with refried beans. This was a big hit with my guys.

she made with her leftover turkey, she called turkey taco bake. One year not long after I married, my sisters came for a visit and she made it for them. One of them emails me for the recipe every year.

ETA: that was 25 years ago.

Supposed to be 8 servings

Ingredients
4 cups cooked, chopped (or shredded) chicken or turkey
1 (10.5 ounce) can condensed cream of chicken soup
1 cup sour cream
Salsa (M - I think 16 oz. jar but might want to get larger just in case I'm wrong.)
1 (16 oz) can beans (M - pinto, kidney, or black, your choice but I prefer black)
1 (9.75 oz) bag corn tortilla chips, gently crushed
2 cups shredded cheddar cheese, divided I used 2% cheese, but any variety will work
Optional garnish: chopped tomatoes, additional sour cream, guacamole or avocado, sliced green onion, sliced olives, sliced jalapeno pepper

Instructions
1. Preheat oven to 350 degrees F. Spray a 9x13-inch baking dish with cooking spray and set aside.
2. In a large bowl, combine chicken or turkey, soup, sour cream, beans, and salsa.
3. Place half of the crushed chips in the bottom of the prepared baking dish. Top with half of the chicken or turkey mixture. Sprinkle with 1 cup of cheddar cheese.
4. Layer with remaining chips and finish with remaining chicken or turkey mixture.
5. Cover and bake for about 20 minutes. Remove cover, top with remaining 1 cup of cheese, and bake for about 10-15 more minutes, or until cheese is melted and starting to brown on top.
6. Garnish with optional toppings.

Recipe Notes
Cooking Just for Two? Cut the ingredients in half and bake the casserole in an 8-inch square dish. Alternatively, prepare the ENTIRE recipe, but divide the ingredients between two 8-inch square pans. Bake one now, and freeze the other for later!
Can you freeze Taco Casserole?
Yes! I suggest assembling the casserole as instructed (but add the final layer of cheese on top), wrap tightly with plastic wrap and foil, and freeze the dish BEFORE baking. When ready to bake, thaw the casserole in the refrigerator overnight and bake according to recipe.

Black beans would definitely work here, too. Just about any toppings you enjoy on tacos and burritos.

If I made it, I'd probably do the milk separately (probably adding a bit of chicken broth so it doesn't reduce too much), low-heat simmer it for a little while w/the chili powder + some onion powder, coriander, cumin, and the drained green chili's. Just like 20 mins or so at a low simmer... to develop some character. Then add it to your roux, and do the rest as you did.

There would def. be some fresh cilantro and fresh tomato in that mix somewhere as well, but that's just me.

Not criticizing (at all!) but I'm pretty well-regarded as a cook among people who know me

Like I said, , I was using what I had because I didn’t want to go to the store. 🙂. Your suggestions are all good ones. I should have thought to add cumin …. Duh

I thought some roasted corn would have been a nice addition as well.

Not up to snuff with your wonderful salads tho. 🙂

What you made is sort of a chicken chilaquiles casserole but an improvement over the usual clean out the fridge variety. Around here, people call it "chilly willies." I haven't had it for ages so I'm probably due. I think it's even better with fresh tortillas, fried or unfried.
