What's for Dinner, Tues., Dec. 27, 2022

Salad of chopped manchego, green and black olives, peppadews, cherry tomatoes, red onion, capers, green and yellow peppers. My new "red" salad dressing, which I am always looking for ways to use because I like it so much.

Jumbo shrimp with pasta; garlic/lemon/red pepper flakes/olive oil.

Dessert is Thai banana fritters that I bought at Trader Joes.

Sweet 'n Spicy Good Earth tea.

The foster care coordinator texted me and asked if I could come in and work in the clinic tonight. I said yes. We have a full fridge so no problem

I've made this several times before and it's delicious. I'm using a combination of ground chicken and ground turkey, because that's what's in the freezer. I'm thinking that should work out just fine.

because I'm tired, sore and not hungry. (Will post in a separate thread why, and it's not bc of divinity. I haven't made it yet. )

So I'm fixing him beer battered fish fillets, tater tots, hush puppies and peas. He's fine with this since it was to his benefit that I'm tired and sore. Plus it's getting cold again and I wanted to turn on the oven to add more heat to the house.

ETA: on second thought, I just threw in some tater tots for myself, and will have them with Frank's and bleu cheese dressing.

wife had chicken. I had beef and lamb
was so good ... had the mixed greens vice rice
grilled onions, red cabbage, tomatoes, hummus
pickles, tzatziki sauce, lettuce, feta hmmmm
pita bread so good ...

Escargots (tons of garlic and butter,) with homemade bread to start.

Prawns coated with flour and sautéed in olive oil, white wine and Dijon mustard. Served with steamed asparagus that is then baked with grated Asiago cheese on top. More of the fresh bread.

Sliced apples and brandy for dessert.

Got half a tenderloin to cook and this will make plenty of gravy. Meat, starch, and veggie!

Baked tilapia with a crusting of Sumac. It gives a earthy lemon flavor
Baked sweet potatoes
Steamed broccoli with lemon juice

About Sumac. It adds so much to a dish

My own invention (if you don't count all the people who probably stumbled on it before because that's what they had on hand). Basically a quiche with cheddar instead of gruyere and sauteed leeks instead of onions. Added some of the Christmas ham for body and flavor.
