Hope you had a productive day and beat the rain. And that you safely accomplish your current mission.

We're having the pork and sauerkraut I put on last night in the slow cooker but was too late to eat. I'm making baked mashed potatoes with sour cream, grated parm and garlic to go with.

apple cobbler
fudge

came supper time and yikes

went in the freezer got cheese stuff manicotti
and meat sauce .. garlic bread and green salad
thank goodness for freezers

5. Thai food, which I had never had

It was delicious! Green curry with chicken, veggie dumplings, and spring rolls. A friend brought it over and we ate while visiting. It was nice to have some company for a few hours.

She left the leftovers. I’ve already had another serving of the green curry and now have jasmine rice in my rice cooker so I can finish off the last of it later.


I think of curry as Indian curry, and am not a big fan coconut milk, so wasn’t sure I’d like the Thai style. OMG it is GOOD!

But the nice thing about Thai food is that there are other, non-curry dishes that are also delicious.

7. Shrimp With Buerre Blanc

Used 16-20 count shrimp.
Had white sliced mushrooms, julienned red bell pepper & diced shallots. Seasoned with garlic, some paprika, white pepper, a pinch of cayenne, juice of a half lemon, pinch of cinnamon & salt.
The sauce was made first & I fricaseed the shrimp in the sauce.
Served over egg noodles.
Tossed the noodles with sauce so serving was one stop shopping.
My wife loved it. I was happy with it too.

on New Year's Eve which typically consists of black eyed peas. But when I saw what they were charging for hammocks, I decided to invest in some salmon. We have a shop that flys it in fresh. So here's tonights menu: Roasted Salmon with Lentils and Bacon. So I've got a lot going for me with this meal. The bacon is pork which is meant to bring forward motion or advancement. The lentils represent prosperity (round like coins) and the scales on the salmon (okay, no scales when bought) resemble coins (more prosperity) and they swim forward which represents progress. So I'm thinking that I'm all set for 2023! hahahahahaha

Lentils with veggies are sautéing right now. Waiting to start the salmon! A yummy New Years Eve feast!
