A friend gave me this recipe. I have been tweaking it ever since then as it was a little to be desired until I happened on a better recipe by replacing the whole egg with two egg yokes. I use the egg whites to make Fluffy Frosting. I've always loved Fluffy frosting since I was a child. Watched my mother make it and learned how to make it myself shortly after.
The cake now has a rich and moist crumb. Before it was just too eggy. The whole egg never seemed to blend very well, even using my hand held blender it never achieved the texture of a great cake. But now even hubby likes it better.
I also use a 2 Cup Pyrex dish instead of a mug. I also butter and flour the dish.
Here's the recipe if someone wants to try it.
4 T Flour
4 T Sugar
1/4 t Baking Powder
3 T Butter
3 T Milk
2 egg yokes
1 t Vanilla
Mix dry ingredients together. Melt butter in microwave, stir in dry ingredients, blend milk with egg yokes and stir into the other ingredients. I cook in the microwave for 2:45 minutes on high. Of course your microwave will probably vary so use the toothpick trick. I usually try and turn it out while hot, but be careful as it will be extremely hot. I slice it in half like a multi-tiered cake. I cool it down while I make the Frosting. After frosting I cut it in half, I get one half and hubby the other. Whew guilt free
If you want a chocolate cake add 2 T Cocoa. Spice cake add as much as you so desire. Thing is to have fun and experiment.
I have even started mixing the dry ingredient in bottles to make it even faster

2 egg whites
1 Cup sugar
1/3 Cup water
1/4 t cream of tartar
in sauce pan add sugar, water and c of t. Bring to a boil and when it reaches 260º take out heat. Also be sure to brush down any sugar crystals with heating.
Beat egg whites in glass or metal bowl until stiff. Slowly (very slowly you don't want to cook the egg whites) pour a steady stream of sugar mixture into the egg whites. Continue beating until very Fluffy and some vanilla. Presto Magick Fluffy Frosting.
Frost cake and dive in!

(51,907 posts)You have used BOTH the yolks and the whites from the eggs. I just HATE it when recipes call for only whites or yolks and I can't think of what to do with the other half of the eggs except throw them out or save them in the refrigerator until they go bad.
