Need some suggestions.

In about 10 days I'll be going to a pot-luck thing for a good friend's birthday. Here's the menu so far:

Friend is grilling ribs (the event is at his house).
Another friend is bringing potato salad.
Yet another friend will have a vegetable, not yet specified.
One more friend is bringing dessert.

I'm thinking of doing a starch, by which I'm inclined to think bread or rolls of some kind. But I am definitely open to suggestion.

I always bring a fruit salad because it's refreshing after all the high calorie dishes. Berries, watermelon, peaches, little lemon juice.

1) A nice Cesar salad. Or
2) Baked beans. They pair well with potato salad. Or
3) broccoli, rice & cheese casserole. Veg and starch all in one. Always a potluck hit. Or
4) corn on the cob. I like it boiled, salted and heavily buttered.

For a shortcut, instead of starting with dry Navy Beans, Use Bush's original flavor canned baked beans. You will need to pre-cook the bacon, because you won't be cooking in the slow cooker for eight hours.

it doesn't really matter what's on it - carrots, celery, etc. If you arrange it into something ridiculous and entertaining, they will be delighted.

Do a Google search on "vegetable tray art" for inspiration.

They're easy, can be heated up very quickly in the microwave, and most people happily eat them.

Parker House Rolls are a treat (I'll link a video).

We always find that these parties are deficient in good salads, so we try to make a really nice salad to bring. Something interesting or different. A roasted beet/goat cheese salad, or even this amazing roasted radish salad we tried recently (another video I'll link).

Just flour tortillas
spread with cream cheese
sprinkle pickled jalapenos
roll up
chill
slice into bite size snacks

pretty quick and easy... and always a hit
