What's for Dinner, Tues., Oct. 7, 2025

Stir-fry vegetables with chicken breast strips. Has broccoli, zucchini, scallions, carrots, cauliflower, snow peas, and peppers, mostly red.

Kombucha: apple cider and cherry mixed.

Dessert: Just tea tonight because I lost it in the sweets department in the middle of the night.

We have gotten just over an inch of gentle rain per my garden rain guage, which is really good because it has been so very dry.

Eating a cup of soup at lunch listening to the rain today is now a nice memory

2. Crab cakes

This past weekend saw the end of the Bethel Woods Harvest Festival where merchants from all around NY, NJ, PA and elsewhere hawk their goodies. We bought sour pickles, sun-dried tomatoes, marinated artichoke hearts, several types of olives, French baguettes (two-for-one as it was closing time!) and freshly made crab cakes from MD.

I’ll sautée the cakes in olive oil and serve them on a bed of iceberg lettuce with lemon, hot sauce and tartar sauce. Fried corn and steamed asparagus as sides.

Vanilla ice cream for dessert.

My friend and I are having our usual Tuesday dinner date at one of the local Mexican restaurants. We've been doing this for the last 3 years.

and it's a good, low cal meal. You can use tomato sauce and I sometimes add basil pesto if I have it.

BTW how many watermelons are left out of the 12 you saved from the deer/raccoons/groundhogs?

they are small ones. I love spaghetti squash and we normally grow it every year. Still getting tomatoes and peppers out of the garden, but I look for a killing frost here within the next few weeks.

Dinner: Rigatoni with chicken-ricotta meatballs (Thyme-laced chicken and ricotta meatballs melt into a herby tomato sauce) Will inform about quality later.

(Ice cream later)

Rained here all day so I made a vegetable soup with chopped garlic, ginger, onions, celery, carrots, red bell pepper, sliced cabbage and mushrooms that was sweated before I added veggie broth, tamari, cooked green peas, tofu cubes, sliced canned water chestnuts, hot pepper flakes, and a splash of sesame oil. Last minute I added cooked brown rice noodles. House smelled nice. Cheers!🥂
