What's for Dinner, Tues., Dec. 30, 2025

German potato salad using those colorful little creamer potatoes in red, yellow, and purple. I cooked them overnight in the slow cooker.

Impossible burger with all the trimmings: lettuce, red onion, cheddar cheese, and South Carolina-style BBQ sauce.

Kombucha: Ginger-pineapple

Dessert: White cake with raspberries baked in; served with Greek yogurt, honey vanilla flavor. Hot tea.

Had muck coming out of faucet earlier..

Wth they didn't build this place for ghe extreme heat & cold is beyond me.

Pressure is restored, but still looks gross. Gs is investigating.

If water is back to normal, I'll make linguini alfredo with chicken sausage that I was too lazy to make last night.

Baked ham, blackeyed peas canned from our garden, and flavored with my own salsa, boiled cabbage, (with lots of butter and pepper,) corn on the cob (bought from a local farmer last summer and frozen,) and cornbread. Tastes like my childhood.

Choc icecream and coffee later.

Still under the weather from Covid and my wife is also infected, but I managed to make a quick steam-fry with onions, orange bell pepper, broccoli, mushrooms and garlic. Added tofu and Wegman’s garlic sauce. Brown rice on the side.

7. Sandwiches

We’re planning a cooking fest for tomorrow night so I'm making Cubano sandwiches for tonight.

Lightly buttered hero loaf with yellow mustard on both sides of the bread. Then layers of roasted pork and glazed ham with a final layer of salami. Add some Swiss cheese and thinly sliced dill pickles. Homemade fries on the side served with ketchup.

We have some Chunky Monkey ice cream left for dessert.

ETA: Recently, I heard an interview with James Taylor and he was asked what was his favorite sandwich. He said a Cubano but I had never heard of it. Of course, I had to try one and it’s become a favorite.
