Dubliner Cheese -- why didn't someone tell me about this years ago?

I bought a 2 lb block of Kerrygold Dubliner yesterday at Costco.

It's great -- like the child of a marriage between Cheddar and Parmesan. It has the same dry texture and nutty flavor of a good Italian aged Parm, but some Cheddar notes as well.

I think it would a great cheese for pasta, pizza, etc.

I first tried it in buttered coffee which is amazingly good, by the way.
I then wanted it in all other things butter. Too yummy for words.

I get it at Costco and shred it into 2 cup portions, freeze and then use whenever. I love all of the Kerrygold products like their butter and garlic butter and cheeses but they can be expensive. I am happy Costco carries them.

We had dubliner cheese for Thanksgiving and brunost (brown cheese) from Norway purchased in Denmark. It was so good.

when it started appearing. Great stuff!

Haven't done 2 lbs worth, but it's a cheese with a great balance. Love it.
