This is so surprising for late December. We've only been back in PA for 5.5 years, but I don't remember having a snow cover like this so early (if ever). We are 100 miles north of where we grew up in the Pgh. area and the weather is always cooler and snowier up here.

Husband will be on the roof shoveling snow this morning .

We went to the mountains last week for four days and I really wanted to see some snow.

But there was none, sadly.

The recipe is as simple as can be:

6 Anaheim chilis
your choice of cheese! (I used a 2% low fat shredded "Mexican blend&quot

Cut a slit the length of the chili and remove the membrane and seeds. Place chilis in a pie plate and cover with plastic wrap. Microwave on high for 3 minutes, or more until chilis are crisp tender. Drain the liquid from the plate. Stuff the chilis with however much cheese you want, cover with the plastic wrap and microwave for 1 minute or more until the cheese melts.

I used to make a peanut sauce for a stir-fry of chicken chunks, mushroom, & garlic. Was a favorite until the peanut allergy got me.

And Swai is amazing in any form.

I've seen the filets on sale at the store but I never tried it. Is it comparable to flounder?

White fish, flaky, very mild flavored. Cooks very quickly; does well in a batter baked / broiled / fried style. Needs a sauce, imo, to kick it up a bit.

And, like tilapia, reasonably priced these days in the market.

with arugula mayo. Caesar salad. And in case that old saying "it's the thought that counts" is true, then I'm THINKING of making the white chocolate macadamia nut cookies on the cover of the December issue of Saveur magazine.

At least it's supposed to be. My pancetta shrank unattractively, but it gave the sandwich a wonderful saltiness. And I'd be happy to report on the cookies, which I've decided I won't do today, but tomorrow instead.

Both me and the wife are getting over the flu, and she asked for beef stew. So home made beef stew it is.

Purple carrots
Orange carrots
Yellow carrots (they smell like parsnips)
Celery
Gold creamer potatoes
Leeks
Garlic
Rosemary
Thyme
Worcestershire sauce
Beef stock
A ton of red wine

Cough, runny nose, etc.

We don't have any fevers, chills, fatigue, etc.

Wife and I deal with it differently. I use everything in the medicine chest and mini bar (Irish cough syrup rocks) my wife uses denial and the mini bar.

it was great but i had a steak sandwich for lunch and i don't know that i want it three meals in a row. that leaves me with few alternatives, however, and i'm leaning toward the radioactive orange mac and cheese over a bowl of frosted flakes.

I don't even have a can of veggies to put in there.

It went really well with fresh seeded rye bread and ham sliced off the bone sandwiches and spicy deli mustard.
