Haven't made it in years, but thinking about it again. Its a real keeper!

EDIT: Sorry, should have said earlier. I used red/yellow/orange peppers instead of green; green pepps have a slight bitterness I don't care for.

I am going to make something very similar tonight, but with carrots (because that is what I have) and I'm going to throw some vermouth in there.
