Who'd have thunk it: Brussels Sprouts that satisfy like French Fries

Ingredients
1 1/2 pounds Brussels sprouts
3 tablespoons good olive oil
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Directions
Preheat oven to 400 degrees F.

Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly. Sprinkle with more kosher salt ( I like these salty like French fries), and serve immediately.

The recipe is much more the technique than the quantity. How many of the little jewels can you eat?

I didn't follow the quantities at all. I also don't buy them by weight. I pick all the same size and count them. They are, of course, priced by weight.

A little olive oil, a little salt, a lotta heat and you're there!

If you won't tell me I'll have to estimate it based on the sodium.

...but did not make them crispy. I put some butter and olive oil and kosher salt and pepper and red peppers in a pan, melted all in the oven, trimmed some sprouts, sliced up about 3 cloves of garlic, stirred the garlic and brussels sprouts in the seasoned oil and butter mixture until coated, then roasted them in a 350F oven for 45 minutes. (Sorry no measurements, I winged it last night).

It was really good! Next time I will try your method with the higher heat so they get crisp on the outside, that sounds really good.

I marinate halved sprouts, halved small broccoli heads and chunky sliced red onion in olive oil, red wine vinegar, a little Worcestershire sauce and brown sugar. Set aside at room temp, then brown them on the side of the grill when you turn the main dish. All come off the grill together to plate at the same time.

They come out nicely "toasted", savory and a little caramelized.

I generally eat them or asparagus in place of french fries (I have Type 2 Diabetes. Since I found out I was pregnant, I have had to be even stricter with my diet, so I always have a green veggie instead of French Fries)

Thank you for the recipe! Food gets kind of boring sometimes with so little to choose from!

will put the same ingredients as you have together, but slow roast in a frying pan.

then serve with bacon bits and blue cheese crumble.

sorry, guess I tripled your calorie count.

tomorrow. Actually, my birthday is today but my favorite people could only come in the middle of the day tomorrow. Actors! So, I thought this would go well with roast duck. I'm doing the baby bliss and Yukon gold potatoes in much the same way, but I'm going to be roasting them in duck fat. I could roast the sprouts in duck fat, too, but maybe that would be a little too much. They are younger and all have hearty appetites. Gonna be killer!

Have to try it I guess, but in my book it's a looooooooooooooong leap from brussel sprouts to french fries.
