Asian tofu and noodle soup

Ingredients
12-16 oz extra firm tofu
6 T miso paste
1 T dashi powder
Dash or two reduced sodium soy sauce
3 green onions finely chopped
1 C frozen corn
4 C baby spinach, chopped
1 package Udon noodles

Directions
Place tofu on several sheets of paper toweling, place a weight on top of it and let sit for an hour or two, to remove some of the water. Then chop into bite-size pieces and fry in vegetable oil until golden brown. Remove and place on paper towel. Meanwhile, prepare noodles according to directions on package. In a large pot, add 6 cups water. Bring to a boil and add miso paste, stirring to dissolve it. Then add dashi, corn, spinach and soy sauce. Simmer for 5 minutes. Add tofu, green onions, noodles and serve piping hot.
