Fried Tilapia Veracruzana

Ingredients
For the fish:
2 Tilapia filets cut into 4 slices
1 cup plain bread crumbs
1 T garlic powder
1 t black pepper
1 egg
1 c milk

Veracruzana sauce
1 c grape or cherry tomatoes, quartered
3/4 c green olives, chopped
3 green onions, chopped
1 cup parsley, chopped
1/3 c capers
2-3T olive oil
dash of black pepper
salt to taste

Directions
Mix all the ingredients for the sauce in a bowl. Cover and set aside for an hour or so. In a shallow dish, whisk the egg and milk. Combine bread crumbs, garlic powder, and pepper in a bowl. Dip filets in the milk/egg mixture and then dredge them in the seasoned bread crumbs. Saute in olive oil over medium-high heat in a skillet until golden brown. Top with sauce and serve.

I have a similar recipe but the tilapia isn't breaded. I know this will be delicious.

Instead of heating up the fish in the microwave, I reheated it in a non-stick frying pan. Much better that way.

P.S. I pretty much winged it on the recipe. The breading put the dish over the top!
