Caesar salad for sure and I think just some antipasto type things. I have some ham, cheese, pepperoni, endives, fruit and who knows what else.

Oh, yes, and several good bottles of wine.

2. 40 cloves of garlic

Any recipe you have for chicken roasted in a dutch oven with 40 cloves of garlic (3 or 4 heads), cognac, and white wine will be great. Can't miss.

I made a "salsa" of sun dried tomatoes, garlic, capers and hot peppers. Roast asparagus and smashed red potatoes.

8. Roasted eggplant with chickpeas.

I was planning to make soup, but when I got around to it, I realized I had no onions. It was too late to go out and buy some. I had some leftover roasted eggplant in the refrigerator. I pulled out some chickpeas I had in the freezer, heated them up with the eggplant, and tossed them with some olive oil, garlic, and lemon juice. I should have that more often.

9. Left-over lentil soup

I made for dinner yesterday. Very simple soup - just lots of onions, carrots, celery, parsley. I had about a half a bag of lentils so I used that up. (I don't care for garlic so I didn't put any in). I'm the only one in the family who likes it so I have plenty for the rest of the week. A nice crusty french bread and REAL butter. Very tasty lunch.
