We have a big, beautiful and much-needed snow. Terrific for the skiers if they can get to the slopes. I-70 closed going east. Did you see the US win the Soccer cup over Costa Rica; couldn't stay on their feet or see through the blizzard we had last night but they persevered. I will be staying in and enjoying chicken noodle soup and corn bread with Kenyan tea.

DH announced last night that he no longer wants to eat red meat or chicken that is not free range. Bacon (pork! it's the other white meat!) is apparently a-ok.

This should be good. Going to make an alfredo type sauce, which we both love, and it will provide some good leftovers.

Spouse left on a business trip, but before he did, I asked him to make something with leftovers as I am putting in my garden and it would help time-wise if I didn't have to put meals together. So I asked for one thing with leftovers and he made me all this:

--1 meatloaf
--spaghetti and meatballs
--roasted chicken (organic, free-range, of course!)
--lasagna
--spaghetti carbonara

Plus salads: tomato. Celery root.

What to do. What to do!!?

My friend is coming over tonight, so maybe I'll let her choose.

cbayer, wise choice on the part of your husband. I won't have chicken that isn't free-range. Will not buy any other kind.

And as far as red meat goes, it's been a rarity around here for a long time, but if we do have any, it's buffalo or grass-fed.

We are eating less meat all the time, and I try to load up on good stuff when we go over to the mainland.

But right now, I don't have squat and I missed the deadline for ordering produce this week.

OTOH, I have gotten to the point that I would much rather go meatless than eat another piece of bad meat.

What's funny about DH is that he has always been a meat and potatoes kind of guy (english), so I have often catered to his wishes. So this is kind of a relief.

Also baked potato and greens with a salsa verde for the chicken. Everything should be ready very soon.....
