I think we're going to finish the twice cooked* leftover pork ribs.

*first cooking was smoker, but they cured rather than getting tender, so the fully cooked rib ham was sliced into single ribs and slow cooked so Dad wouldn't complain of them being dry.

The salad will have goat cheese, herbs (basil, parsley, thyme, mint) and a simple lemon/olive oil dressing.

All I really want is the salad, but I need to get rid of some leftovers.

T-Man is having leftover sauge pizza, Maddie is having steak stir fry with jasmine rice and I am having a chopped salad. Just got back from a 3 mile walk and can't even think about anything hot.

I couldn't find a good grilled veg w/pasta recipe, so I bought some tortillas and am making one of my favorite Mollie Katzen recipes: Eggplant Almond Enchiladas.
