What's for dinner? ~ New Year's Day Edition! 2012!!!

I will do something with black eyed peas later, but I've been lusting after everyones post roasts and stews lately, so I just started a big batch of beef stew in the crockpot. The recipe I'm using is unusual for me....I'll tell you about it later if it doesn't suck.

to ensure that I'd be sober enough to toast all six US time zones. But for my first New years' dinner, I'll be having leftovers: the leg of lamb and mac and cheese I had for christmas.

2. My folks are coming in with a veggie lasagna. We've got six kids in the house.

Well, technically young adults, but we still call them "kids". We're making a salad and the black-eyed pea recipe I posted earlier is ready. The middle daughter made a seeded rye bread in the bread machine and we have an Italian bread for making garlic bread. If that's not enough for the kids, there's still junk food left over from last night's assault.

Of course, they were up until at least 2:30 last night and a couple made it to 5 or so. My wife and I cashed it in about 10.

I started yesterday with the stock in the crockpot--a couple of chicken carcasses saved, frozen. Unpeeled shallots and garlic. Carrots, celery, herbs de provence in a tea bag.

Left that overnight, on Low. 12 hours later, I strained, and let the fat come to the top.

In the am, I took a whole, split chicken breast and browned it, rendering plenty of the fat. Let the chicken sit on a cutting board, under foil.

Wiped out the stockpot, and in about 1 tbsp of chicken fat, I sauteed kale, escarole, and collard greens. Added salt and pepper, and when it was barely wilted, I poured the strained stock over it.

Then I added two cheese rinds. That's the secret ingredient to good Italian soup.

Then I shredded the chicken, you want to shred the chicken, not cut it. Added to the pot.

In a small pot, I took about a cup of stock and poached the meatballs. I'd made meatballs for xmas, so when I did that, I made sure I took a pound of meatball mix and rolled some tiny ones and froze them. I poached them, then drained and added them to the soup pot.

It's gonna sit on the burner for another couple of hours, then I'll make some chickarina to go with it.

Chocolate-dipped Shortbread Cookie

Nice domestic Merlot with the lamb.... Wishing all C&B the best in 2012!

Homemade sauce, enough for two meals--froze the other half. Homemade corn tortillas, grated cheddar, onions and refried beans.
