Pancetta pasta. Wow, this one turned out great!

Ingredients
3 oz. pancetta, chopped
1/2 green pepper, chopped
1/2 small onion, chopped
1/2 roasted red pepper, chopped
black pepper to taste
splash dry sherry
2 rosemary sprigs
Parmesan cheese
1/2 c chicken broth or stock
1/2-3/4 pound spaghetti, cooked

Directions
Fry the pancetta until it's crispy. Remove and soak up most of the grease from the pan. add a bit of olive oil and sauté the onion for a few minutes add green and red pepper and cook for a few more minutes. Then add chicken stock, sherry, and rosemary sprigs and simmer for a few minutes. Remove rosemary, sprinkle with black pepper, add pancetta, fold in spaghetti and serve with parmesan cheese.
