with just the breath knocked out of it is my favorite. I like it rare enough to try to run, since that is why I have a knife and fork (joke, but not too far from the truth LOL)

My stomach has been bothering me, so I need something light. It has celery, carrots, rice, kale, a tad of tomato - not much at all, onion, fresh garlic and thyme in it.

all sauteed to tender/crisp. Soup was loaded. Only drawback, no veggie pot stickers so I had spring rolls. Missed the dumplings but the rolls were fine. Oh, had foil wrapped garlic chicken as a starter with the soup. A nice splurge.

Plus there are left overs.

12. Back after a hiatus...
Fri Nov 1, 2013, 09:05 PM
Nov 2013

but I've got some tri-tip beef strips. So, I'm thinking pan searing with onions, some baked french fries, with a side of steamed green beans.

(My "hiatus" had to do with bruising a couple of ribs after a fall. Needed the pain meds, but got off them today, by choice. I was tired of feeling, well, "loopy". And no one told me that codeine-type drugs inhibit bowl movements. UGH!&quot A lesson for those who don't know.

Anyway, all is well, in more ways than one...(!). I still have a few weeks of recovery, but dammit, I really hate being out of the kitchen!

13. They wait until you're doped up with pain meds to tell you that
Fri Nov 1, 2013, 10:14 PM

the pain meds cause constipation. They should be required to tell every patient on the pre-op visit that pain medication will almost certainly cause constipation. I work in the OR but I didn't even know about this problem because I had never taken pain medication. When I recently had surgery and needed help, I didn't have anything around the house for constipation. I have always been regular down to the hour from eating a high fiber diet, but after a few days with no colonic movement, I realized that I needed something to move it along. I finally found an old bottle of mineral oil left over from a craft project and, in desperation drank a big slug. After about an hour of agonizing cramping, and straining my poor little colo-rectal tract, I finally got relief. My advice to folks who are about to have any type of surgery where they will have to use pain medication: LAY IN A SUPPLY OF STOOL SOFTENER or a laxative. You will need it.

thanks for telling it how it IS, Japple.

OUCH, supreme. But, like I said, I can deal with the day-to-day pain... not the obstruction of daily life processes.

And to Japple... NO surgery. Not for bruised ribs....just "suck it up" on the pain, and let the body heal.

Again... This is C&B... let's talk food! (otherwise, I'll do recovery posts in the "health" forum!)

Soooo.... I'm thinking....roasted red peppers on the grille? Anyone? With a spritz of pecorino romano? I'm a huge fan of sheep's milk cheeze!

-g ( The italian-american astronomer who digs red wine and awesome food... draw your own parallels to my moniker.)

(ps: like I said this is C&B, not the recovery forum... but very cool for your thoughts on getting me back in the C&B kitchen on DU!)

17. recipe

My spicy rice and beans was insanely good, so I decided to come back and post the recipe:

Spicy Black Beans and Rice
• 1 pound dried black beans, soaked in enough cold water to cover them by 2 inches overnight or quick-soaked (procedure follows) and drained
• 1 ham hock
• 2 large garlic cloves, minced
• 1 bay leaf
• 1 1/2 teaspoons dried orégano, crumbled
• 3 cups coarsely chopped onion
• 2 green bell peppers, chopped
• 1/2 teaspoon dried hot red pepper flakes, or to taste
• 1 tablespoon chili powder
• a 28-ounce can Italian tomatoes, drained and chopped
• 1/3 cup finely chopped fresh coriander, or to taste
• red-wine vinegar to taste
• cooked rice as an accompaniment
• chopped radish or red onion as an accompaniment
In a kettle combine the beans, the ham hock, the garlic, the bay leaf, the orégano, the onion, the bell peppers, the red pepper flakes, the chili powder, and 8 cups water and simmer the mixture, covered, stirring occasionally, for 3 hours, or until the beans are tender. Stir in the tomatoes and salt to taste and simmer the mixture, uncovered, stirring occasionally, for 1 hour, or until the mixture is thickened. Discard the bay leaf, remove the ham hock from the mixture, and chop the meat. Stir the meat into the mixture with the coriander and the vinegar and serve the beans over the rice with the radish or onion.
To quick-soak dried beans:
In a colander rinse the beans under cold water and discard any discolored ones. In a kettle combine the beans with enough cold water to cover them by 2 inches, bring the water to a boil, and boil the beans for 2 minutes. Remove the kettle from the heat and let the beans soak, covered, for 1 hour.

I added corn cut from 3 ears of corn and also topped it with shredded cheddar.

I chopped up a bunch of carrots and simmered it with the ham bone. It was thick, creamy and yummy.
