Ingredients -
Spice and herb rub
4 Tbsp chili powder
1 Tsp kosher salt
1 Tbsp brown sugar
2 teaspoons ground cumin
1 teaspoon cayenne
1 teaspoon ground oregano
1/2 teaspoon cinnamon
1/4 tsp ground cloves
put all of the above in a bowl and mix, then add in and mix some more
3 cloves minced garlic
The meat:
2 or more lb pork tenderloin - the ones at Trader Joe worked great (the recipe called for a boneless 3 or more pound pork shoulder roast - the tenderloin is very lean, but becomes really tender)
Pat the meat dry and then coat well with the spice and herb rub (be sure to add the garlic!) - press the rub in well over the entire surface. Place the herbed meat and any spice rub that falls off into a large plastic zip top bag and refrigerate for 12-24 hours.
Put 2 tbsp canola oil in a non-stick pan over medium high heat - add the meat and sear on all sides to brown a bit and toast the herb crust.
Place the meat and any drippings or spices and herbs that came off the roast into a slow cooker - cover and turn on low, cooking for 8-10 hours (don't add liquid; over time, juices escape the roast and make a nice braising liquid in the cooker). The smell will be quite incredible - all day - and is guaranteed to make everyone very hungry!
Once the meat is done, it will be fall apart tender; remove the meat onto a cutting surface, slice into slabs, then using a fork, shred it to a desired consistency. Add the meat back to the crock pot pan to coat it with the drippings and spices.
You can use this as a filling for tortilla shells, adding cheddar and folding it over and grilling or baking to melt the cheese (perhaps covering with a salsa or red or green enchilada sauce - or...
What we did was serve as a topping over cooked rice. On top of the meat and rice we added spiced black beans, sauteed sweet peppers, caramelized onions, scallions, tomato salsa and tomatillo salsa, topped with cheddar.
Yum - this was the best tasting and most tender pork I've ever cooked...or even eaten at a restaurant!
