Cheesy awesome!
Ingredients
2 servings panko
2 large eggs
1/2 cup shredded cheddar cheese
1 tsp cayenne pepper
1 head large cauliflower
Directions
1. Cut cauliflower into florets & cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne & salt to taste.
2. Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

(31,170 posts)surfing the food channels on my Roku box looking for cauliflower recipes the past couple of days.
I've run across a lot of mashed cauliflower (which is excellent) and a few popcorn cauliflower (which mostly involve making bite sized pieces and roasting until crispy) and one or two cauliflower as rice (chuck in food processor until rice sized - then cook quickly) but I've yet to see cauliflower pancakes!
