I'm frying cabbage to go with the leftovers

I love cabbage, and I threw in some applewood smoked thick cut bacon to go with it chopped into 1/8's after being cored. There is a delicious amount of potlikker at the bottom of the pan, just waiting to be sucked up by leftover stuffing, mashed potatoes, and turkey.

it is so good, it is probably better than the turkey, gravy and stuffing combined. Not better than the mashed potatoes, but freaking delicious poured all over all of the above!

I mostly use it in Chinese cooking where it's a staple and their favorite food extender. My Irish mother used to cook it to death and the house would smell of nasty sulfur compounds for days. It's one of those foods I hated until I tasted it cooked properly the first time, then I was hooked.

Now, if I only have red cabbage at the time, it does make an odd-colored dish. Can't be beat for flavor, though.

have a tendency to hate it. I had to coax my elder family members into trying it again. They couldn't believe it was the same vegetable. When "they can lose seed of cabbage and I'll never miss it" turned into "this tastes like great collard greens, pass the cornbread" it was a delight to me.

Cabbage has been maligned simply because folks don't have a clue how to cook it correctly. For that matter, greens of many sorts, including brussels sprouts have also been labeled inedible because they were cooked like carrots or green beans. You just don't cook them that way, that long and at that temperature.
