A few disjointed thoughts on "Cooked" by Michael Pollan

As usual he divides up his book in four sections. The four sections are: fire, water, air, and earth. Those sections covered, roasting, braising, bread, and fermentation.

The section on braising had more effect on my cooking than all the others. I already braised, but didn't understand what was going on. Sweating the onions makes a real difference.

If you haven't read Pollan's work, give him a try. "In Defense of Food" had a profound effect on my diet.

"Cooked" is highly recommended.

Other books by him: "Botany of Desire", and "The Omnivore's Delimna." He can be seen on YouTube.

And he has also caused a change in my dining habits.

His conclusions on sugar made me drop it. Pollan says he thinks sugar and cancer are associated.

That was a good read and I am not surprised that he wrote cooked after what he said the book, "in defense of food, he talks about how much processed food is in the supermarkets and how they try to make you buy it instead of fresh ingredients.
