My best friend's son made this on Thanksgiving, and I got the recipe from him. I sooo love it, and it's so simple. Last time I made this, I didn't use cilantro, but it was still awesome. From his email...
2 lbs fresh green beans
2-5 cloves garlic
3-5 T olive oil
chopped cilantro
1 T lemon juice
2-4 T cider vinegar
S&P
"Wash 2 lbs of green beans and cut the strings. Boil them for 10 minutes until soft. Mix 2 to 5 cloves of minced garlic and either ground or fresh chopped coriander in a bowl (keep in mind the coriander flavor will seriously intensify during refrigeration).
Mix the green beans into the bowl and add 3 to 5 tbsp olive oil, mix well to coat the beans with everything. Lick your fingers and then cover the bowl, and refrigerate for at least 3 hours. Just before serving, add 1 tbsp lemon juice, 2 to 4 tbsp cider vinegar, and black pepper to taste. If you add these things sooner, the acidity will overpower the coriander. Serve cold with a cold one."
I like this one because it's fresh, vibrant, cold, and doesn't contain the ubiquitous cream of mushroom soup.

(131,106 posts)My daughter (and I) did fresh green beans sauteed with garlic for Thanksgiving, and it was SUCH a relief from the mush soup thing! I just sent her this, and she said 'Keep sending!'

either coriander or cilantro?
Needless to say I never have used coriander so I am clueless about the taste.

(2,016 posts)2-4 Tbls, finely chopped if using fresh cilantro. If using dried coriander, I would half the amount. Dried herbs can be intense.
