Tonight...Beef Stroganoff

The kitchen smells amazing, but I'm getting tired. Lol.

Beef Stroganoff


1 large round steak cut up into strips
1 cup sliced mushrooms
1 large onion, sliced into strips
3-4 cloves of garlic, minced
1 stick of butter
2 cans of beef bullion
1 cup sour cream


Melt butter in large skillet. Coat steak strips in flour, salt & pepper mixture. Brown steak in skillet (stir well after browning to loosen up the drippings). Add mushrooms, garlic & onion and cook about 5 minutes until they start to get tender, stirring well. Stir in cans of beef broth. Cover and simmer on low for about an hour, stirring occasionally to prevent sticking. Just before serving, stir in sour cream making sure it’s well heated. Serve over buttered noodles.

A good side with this is french cut green beans with slivered almonds. Get some good crusty french bread and a nice cabernet.

I usually make with a good cut of meat, stir fry the beef and don't let it cook too long.

But sometimes I make with leftover beef, and in that case I let it cook a lot longer.

Hope it was great.

(Dreaming about slurping up that wonderful sauce with the noodles)

Make a standard pot roast, shred up the meat and splat some sour cream (or crème frâiche) into the liquid. It always seems to have a deeper meat flavor than Grandma's Better Homes and Gardens recipe.

Hamburger stroganoff

1 pound lean ground beef (extra half pound more if you are feeding 6)
1 medium diced yellow onion
6 oz sliced mushrooms
1/2 cup minced celery leaves
1 T dill weed
pinch grated nutmeg
2 T worcestershire sauce
S&P
1/2 cup leftover coffee
1-2 cups sour cream (more or less depending on how saucy you want)

1. Brown ground beef with 1 tsp butter in large saute pan. Sprinkle worcestershire sauce as it begins to brown. Season with S&P.

2. In separate smaller pan, brown the mushrooms with another tsp butter. This extra step will enhance flavor.

3. Dump diced onion, celery tops, mushrooms, and everything else except sour cream into the large saute pan with beef. Add the coffee. Stir and cover and simmer on low for 20 minutes or more.

4. Then a few minutes from serving, stir in the sour cream, adjust seasonings, add a little grated fresh nutmeg if you have it. Simmer on low for just a few more minutes. If your sauce is too thick, add some milk or buttermilk.

Good with egg noodles.

I really, really like Hamburger Helper, but it's not that much more difficult to make the real thing and avoid all that bad stuff.

I brown cubes of steak, no breading, and use canned beef gravy for the sauce, throw in sautéed onions, and then of course a dab of sour cream.

Sounds yummy!!
