What's for Dinner? Thursday January 16th....

I'm fixing Chicken Pot Pie.....scratch dough is done and in the refrigerator.

I made the this about 6 weeks ago and froze the extra gravy and veggies. I'll make additional stock with a pack of chicken thighs and of course add the chicken tonight when I get home from work.

Even the "lazy cheater" version I make is good.

I use 9" frozen pie crusts that I thaw then cut and shape into those little 5" aluminum pie pans (remember to use a light non-stick spray). I then pre-bake the crust (make sure to poke the bottom of the crust with a fork or the bottom will form a bubble).

For the filler, the basic ingredients are chopped cooked chicken, cream of chicken soup, and frozen mixed vegetables (no need to thaw). You can add chopped celery, onions, mushrooms..... you name it. Herbs and seasonings to taste.

No top crust needed. IMHO.

Put on the plastic covers and freeze these after filling and pull them out as needed.

The biggest treat for my family is the crust mixed with the chicken gravy mix. They would freak out if I didn't add a topper.

I absolutely love that top crust, even on the ones you get frozen for a couple of bucks.

There is no way I could skip that!

Keep in mind that I make mine in the very small individual pie pans and the ratio of pie crust to filler might be greater than you would get with a big 9" pot pie with double crust.

I'm not sure tere is a















But, I'm not sure there is a "wrong way" to make chicken pot pies!

I really should do stuff like this on my good days and then pop them out of the freezer when I don't feel up to cooking. I'd be eating much better if I did!

I use Pillsbury pie dough, rolling it thinner and spreading it with butter. Use one roll in bottom of glass or baking pan; bake about 10 min. Make white sauce with butter, flour, chicken broth and half and half. Stew or bake chicken breasts, cube, and add cooked carrots, celery, peas, corn, green and red pepper, parsley, onion, celery, fresh green beans, mushrooms, salt and pepper. Pour into baked crust, top with pie dough. Slit and egg wash. Seal edges. Bake about 30-45 min. at 375 till bubbly and crust is brown.

that I found years and years ago when I was still in California. Nothing fancy, just really great food.
Their burritos were huge and sooo wonderfully seasoned. Just tons of beans, a little cheese, and a dark red sauce. Soooo good. I wish could replicate that taste, but I never have...

Once dumped an entire one due to an oven "malfunction". It was one of the final straws before I bought the new oven, lol.

The recipe then calls for chopped red onion, jalapeño and cilantro, but DH's tummy is having a rough time, so I skipped all of that.

It was nothing special, but still tasty.

well, I have to use other leverage because their dad is the one who bought the phones and pays the bills for them, but basically, it's the same. If they want dinner, they clean up after I'm not a total hard ass though. If I make a big mess, I stick around to help. We have some of our best conversations cleaning up.

We went to college during the same years. We both studied science. We were just two states away from each other. I probably met him at a mixer!!

We all met at Caltech for a presentation on the 10th anniversary of the Opportunity rover (Spirit died in 2010). All the top scientists and engineers gave their spin on what they found, what the did to overcome issues, etc. Bill gave the closing remarks on why exploration is important to humanity - which was quite freaking funny. He definitely was on his mark last night. Incidentally, Bill got NASA to make the camera calibration target on each of the twin rovers into a sundial as well. The Curiosity rover has one too, using a spare my best friend had in his desk, with him shouting "But...but...that's mine!!"

Anyway, after the lecture, we ended up going to Old Town Pasadena to Sushi Roku for some awesome sushi and a few laughs. We all declined to drink heavily since 3 out of four of us had meetings first thing in the morning. Fine by me, since I had an hr drive back home to the high desert.

Backstage at von Karmen Auditorium, we were deciding where to go to dinner. It was done in whispers so as not to attract an entourage, which I totally understand. Bill had a receiving line a mile long after the lecture. Finally, I said after an hour, "Bill...I'm fucking hungry! Let's jam."

He gave me a ride in his Prius (what else would he have for a car?) to the restaurant, and we played catch-up. I haven't seen Bill in almost 2 yrs.

The sushi was sooo good. I even had my first geoduck, which was awesome!! (I'm a clam lover, fer sher). The eel was fantastic, as usual. We had the requisite yellowtail, spice tuna rolls, crab dynamite, octopus, etc etc. Posed for a few group photos, which I hope to get in email soon.

All in all, a very cool night!! I would have gone just for the lecture itself.

They live in Studio City (CA), and Ed is 4 doors down from Bill. Ed's got mini wind turbines and solar panels attached to his house, it looks pretty cool. In fact, Ed got Bill to green-ify his own house with solar panels and tankless hot water system. If I could afford it, I'd buy my own house and do the same!

I didn't realize that they lived so close, but I knew they were friends. Miss seeing the show, it was interesting. I designed our house with passive solar, but I'd love to do more.

Blending a smoothie for the morning - Muscle milk (lol, it's a protein drink and I'm hardly the poster boy for muscle), bananas, marzipan, cinnamon.

Almost went for the chicken pot pie though. Tomorrow.

Today I slow cooked a pork roast with lots of garlic and with baby yukon golds and baby carrots. I will probably serve it with some saurkraut/cabbage.

and camembert-in-phyllo parcels w/cranberry sauce.

Except for the salad they were all new recipes for us (me and the kids) and we were a bit underwhelmed. Everything seemed a bit bland. I'll have to add spices if I make it all again.

And I nearly sliced off a finger matchsticking the apple. It's been 10 years since I've cut myself. I was so pissed off!
