Miz t. is out of town for a few days and I'm a bachelor again for a bit.
She doesn't like liver in any form except pate', and she makes a very good one.
Go figure.
I get my chicken liver fix at the Winn-Dixie.
A nice older 'church-lady type' in the deli fries 'em up for me.
As soon as I walk up to the counter she shouts "HEY, LIVER MAN!"
"HEY, LADY! How about fryin' me up a batch of chicken livers?"
"Take about 5 minutes."
"I'll be back."
I pick up a few other things and head back for my livers.
The 'batch' comes to about a pound and a quarter for under 4 bucks.
I'll make 2 or 3 meals off of these, so not a bad deal.
She doesn't overcook them and they're just right.
I eat one in the car on the way home.

dunno why I liked them so much, but that was the only place I could get them.
Didn't make them myself...another mystery of the time.
Place is gone now, I discovered, when I moved back here, after a 6 year absence.
Happy liver eating......I love them too, but Mr. dixie does not.

(29,098 posts)I usually sautee them with onion and a sprinkle of brandy at the end. Sometimes I will puree this in the food processor....Just a few pulses...and make a sandwich on rye with some sliced hard boiled egg and maybe a slice of bacon
Sometimes in memory of my mother I will just cook them on a brown paper bag in the oven which leaves the outsides kind of crispy but the insides smooth and creamy. I give a good sprinkle of kosher salt and make sure no one else is home so I don't have to share.

(4,473 posts)That's the problem I have always found when ordering liver of any sort in a restaurant: They invariably overcook it.
BTW, my favorite way of having chicken liver is the traditional Jewish chopped chicken liver. There is a typical recipe here if you want one.

(34,136 posts)My favorite way to cook them is to take a bunch of thin sliced onions and caramelize them in bacon fat. When the onions are done, I take them out of the pan, toss the chicken livers in a little seasoned flour and quickly saute the livers until just done.
Some weekends when my husband is out of town, I'll buy three pounds of onions and a pound of chicken livers, fry them up and that will be all I'll eat the whole weekend!
